Baked cod with lemon and dill is a Swedish favorite. The addition of potatoes and vegetables makes it an easy one-dish dinner, perfect for a busy weeknight.
The light, flaky cod has a mild taste and texture, sure to please even those who aren’t big fish fans.
Baked Cod with Lemon and Dill Inspiration
The inspiration for this dish is Sweden, my grandmother’s homeland. Fish plays a major role in Nordic cuisine and you’ll see many varieties featured at homes and restaurants. One of the best “cod with dill potatoes” meals I had in Sweden was at the Grand Hotel in Stockholm. It’s a wonderful hotel if you ever visit this beautiful city. My recipe is somewhat different as I designed it to be a one-dish meal, but the memory of my Swedish dinners did inspire me!
Ingredients and Options
The ingredients for this Nordic-inspired dish are simple, yet delicious:
Cod. My preference is always for wild fish. Fresh is best, but frozen cod also works. Here in California, wild-caught Pacific cod is plentiful. Wild pollock is a good substitute if you don’t have cod.
Lemon. Lemons just go with fish, don’t they? Plus, they’re a nutrition powerhouse with lots of vitamin C and fiber.

Dill is very popular in Sweden and is full of healthy antioxidants, magnesium, and vitamins A and C. Plus it’s delicious and makes a pretty garnish.
Potatoes. Small potatoes with dill are a common side dish in Sweden. In this recipe, I used baby gold potatoes but I’ve also made this with petite fingerling potatoes as well. I cut the potatoes instead of leaving them whole so that they will cook with the fish. Optionally, you can roast your dill potatoes separately and serve as a side dish.
Zucchini. I added zucchini to this dish for more nutrition and color. You can omit the zucchini if you like or substitute a similar vegetable.
Serving Your Swedish Cod with Dill Potatoes
This dish is a complete meal, but you’ll still want to add a little something extra. I recommend either a tossed green salad with tomatoes or a Swedish cucumber salad. Be sure to save some of that dill to add to your salad!

Baked Cod with Lemon and Dill

Ingredients
- 4 cod fillets
- 3/4 pound baby gold potatoes cut in quarters
- 1 zucchini sliced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice freshly squeezed
- 1 lemon sliced
- 1 teaspoon minced garlic
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons dill chopped
Instructions
- Preheat oven to 400 F.
- Coat a 9 x 13 inch baking dish with cooking spray.
- In a small mixing bowl, combine olive oil, lemon juice, garlic, salt, pepper, and dill.
- Place quartered potatoes in baking dish; cover with half of the olive oil lemon mixture. Microwave on high for 5 minutes. Remove from microwave.
- Place the cod and sliced zucchini in the baking dish with the potatoes. Coat with the remaining olive oil lemon mixture. Top with lemon slices.
- Bake for 12 to 14 minutes, until fish is fully cooked and flakes easily with a fork. Garnish with additional fresh dill and serve.
