4cod fillets
3/4poundbaby gold potatoescut in quarters
1zucchinisliced
2tablespoonsolive oil
2tablespoonslemon juicefreshly squeezed
1lemonsliced
1teaspoonminced garlic
1/8teaspoonsalt
1/8teaspoonpepper
3tablespoonsdillchopped
Instructions
Preheat oven to 400 F.
Coat a 9 x 13 inch baking dish with cooking spray.
In a small mixing bowl, combine olive oil, lemon juice, garlic, salt, pepper, and dill.
Place quartered potatoes in baking dish; cover with half of the olive oil lemon mixture. Microwave on high for 5 minutes. Remove from microwave.
Place the cod and sliced zucchini in the baking dish with the potatoes. Coat with the remaining olive oil lemon mixture. Top with lemon slices.
Bake for 12 to 14 minutes, until fish is fully cooked and flakes easily with a fork. Garnish with additional fresh dill and serve.
